Preventing cardiometabolic disorders with polyphenols: what the science tells us
Jara Pérez Jiménez holds an MSc and a PhD in Food Science and Technology from the Autonomous University of Madrid. She has worked in several research centres in Spain, France and USA (as Fulbright scholar), being currently a Tenured Scientist at the Institute of Food Science and Technology (ICTAN-CSIC) in Madrid. Dr. Pérez-Jiménez’s has an extensive research activity (> 10,000 citations, h-index 44) with one important area of her research concerning the types and role of polyphenols in human health, especially their action regarding cell homeostasis, anti-inflammatory response, and regulation of several signaling pathways. She has participated in the development of the Phenol-ExplorerÒ database (http://www.phenol-explorer.eu), the most comprehensive data source on polyphenol content in foods. She is also a co-author of a patent, was co-editor a book published by the Royal Society of Chemistry (UK) and was a member of the Expert Committee for Human Nutrition of ANSES (2015-18).
As part of her visit to Cress, Dr. Pérez Jiménez will present current mechanistic, clinical, and epidemiological knowledge regarding the role of polyphenols in the prevention of cardiometabolic disorders.
